    Based in the Cerrado region of 150,000 native trees in 216 mini-farms of 5-15 hectares.

    A steady climate with dry-fresh winters and warm-wet summers creates the perfect environment for amazing beans to be grown. The dry winds in pleasantly hot days

    and refreshingly cool nights are what you will find in this region where the Daterra farms are located.

    The farms are the oldest coffee plantations in the Brazilian Cerrado region, and it is amongst the best coffee producing areas in the country grown at an average altitude of 900 masl whereas some terroirs are around 1,200 masl. It comes as no surprise that this region was the first to become RFA certified.

    Each terroir is harvested individually based on the optimum maturation level of the cherries. To define this the coffee is cupped before harvesting until it reaches the best ripening spot. The cherries are then separated and sorted to produce the best beans. Cherries are selected by their natural mutation stage using a unique technology, robots then guide each coffee cherry individually to the right maturation group. The beans are dried with precision to reach the right level of moisture and are then taken to rest in wooden silos for over 40 days. This process softens the taste and highlights the positive attributes that are found later in the cup.

    The coffee is patio dried and finally drum dried. This multi-step process creates even and exact moisture content in the final product. Additionally, it prevents issues such as over-fermentation. The coffee is meticulously sorted. First coffee passes through a density sorter then it is analysed electronically with a trichromatic sorter, a machine that uses

    full spectrum colour sensors to remove any defects or non-uniform beans.
